Beef Stroganoff with Homemade Egg Noodles

I grew up thinking stroganoff was made with cream of mushroom soup, canned mushrooms, ground beef and IMO.  Obviously that recipe was a throwback from my parents' dental school days; the penny pinching days when a sandwich was made with a single slice of Buddig ham.  Since I discovered "the real thing," I've been on the lookout for the best recipe.  Not surprisingly, this winning recipe comes from Cooks' Illustrated (my favorite!)  We had it on homemade egg noodles tonight (recipe follows) and it was amazing!

Beef Stroganoff

•1 1/4 lbs sirloin steaks, tips (trimmed of excess fat and cut lengthwise with grain into 4 equal pieces)
•2 teaspoons soy sauce
•1 lb white mushroom, quartered
•2 teaspoons hot water
•1 tablespoon dry mustard
•1 teaspoon sugar
•fresh ground black pepper
•1 tablespoon vegetable oil
•1 medium onion, finely chopped
•table salt
•2 teaspoons tomato paste
•4 teaspoons unbleached all-purpose flour
•1/3 cup plus 1 tbsp. white wine or 1/3 cup dry vermouth
•1 1/2 cups beef broth
•1/2 cup sour cream
•1 tablespoon chopped fresh parsley leaves

Directions:
1- Using fork, poke each piece of steak 10-12 times. Place in baking dish; rub both sides evenly with soy sauce. Cover with plastic wrap and refrigerate at least 15 minutes or up to 1 hour.
2- While meat marinates, place mushrooms in medium microwave-safe bowl and cover with plastic wrap. Microwave on high power until mushrooms have decreased by volume by half, 4-5 minutes (should be as much as 1/4 cup liquid in bowl). Drain mushrooms and set aside; discard liquid*. Combine water, dry mustard, sugar, and 1/2 tsp pepper in a small bowl until smooth paste forms; set aside.
3- Pat steak pieces dry with paper towels and season with pepper. Heat oil in 12" skillet over medium-high heat until just smoking. Place steak pieces in skillet and cook until browned on all sides and internal temperature registers 125 to 130 degrees, 6-9 minutes, reducing heat if fond begins to burn. Transfer meat to large plate and set aside while cooking sauce.
4- Add mushrooms, onion, and 1/2 tsp salt to skillet and cook until vegetables begin to brown and dark bits form on bottom of pan, 6-8 minutes. Add tomato paste and flour and cook, stirring constantly, until onions and mushrooms are coated, about 1 minute. Stir in 1/3 cup wine, beef broth and mustard paste and bring to simmer, scraping bottom of pan with wooden pan to loosen browned bits. Reduce heat to medium and cook until sauce has reduced slightly and begun to thicken, 4-6 minutes.
5- While sauce is reducing, cut steak pieces across grain into 1/4" thick slices. Stir in meat and any accumulated juices into thickened sauce and cook until beef has warmed through, 1-2 minutes. Remove pan from heat and let any bubbles subside. Stir in sour cream and remaining tablespoons wine; season to taste with salt and pepper. Sprinkle with parsley.
* Being a teetotaller, I opted not to discard the mushroom liquid, but added 1 tsp cider vinegar to it and used it in place of the wine/vermouth.

This recipe is soooo good!

12 oz. bowtie pasta, cooked
4 green onions, chopped
1 small package slivered almonds
1 can water chestnuts, diced
1 1/2 bottles Briana's Poppy Seed Dressing
salt to taste
2 cans mandarin oranges, drained
1 package crunchy chow mein noodles

Cook chicken and chill. Rinse pasta with cold water. Mix chicken, pasta, onions, almonds, water chestnuts, and dressing. Add salt to taste, then mix in oranges.
Chill before serving.

Sprinkle crunchy chow mein noodles over Pasta Salad. (don't add them to the whole bowl - they get soggy.)

Sheryl's Stuffed Shells

1 box large shells pasta
3 cups (24 oz.) cottage cheese, drained
12 oz. mozzarella cheese, grated
3/4 cup parmesan cheese, grated
3 eggs
1/2 tsp. salt
2 tsp. parsley
3/4 tsp. oregano
1/4 tsp. pepper
1 jar (28 oz.) prego sauce

Preheat oven to 350°. Cook shells about 15 minutes.
Mix drained cottage cheese, mozzarella, parmesan, eggs, salt, parsley, oregano, and pepper in large bowl. Spread a thin layer of sauce in the bottom of 1 9x13 inch baking pan and 1 8x8 inch baking pan. Stuff shells with mixture and place in baking pans. Pour sauce over stuffed shells, cover with aluminum foil and bake for 30-40 minutes, or until heated through. I usually remove the foil and allow the top to get a bit crispy before taking it out. Allow to set for a few minutes.

Pasta with Garlic, Oil and Toasted Bread Crumbs

Benjamin calls these Crumb Noodles and asks for them nearly every night.
Can be a simple entree with salad or vegetables, or a side dish with meat or chicken. Serves 8-10.
1 1/2 lb. linguine or spaghetti
2 t. salt for pasta + 1 t for sauce
3 T. butter
1 C. dry bread crumbs *
3 oz. Parmesan Cheese, grated (not Kraft!)
2 medium garlic cloves, minced (1 T.)
1/8 C. EVOO
2 T. butter
Dash Ground Red Pepper
1/3 C. Chicken Broth
1 t. Balsamic Vinegar
1 C. pasta cooking water
Prepare pasta according to directions, reserving 1 C. cooking water just before draining. Heat butter in large skillet over med-high heat until foaming; add 1/2 t. of the minced garlic, cook 1 min. Add breadcrumbs and cook until golden brown, toasted and fragrant; 2-3 minutes. Transfer to small bowl to cool slightly; when cool, toss with Parmesan cheese. Wipe out empty skillet with paper towels. Mix remaining garlic with 1 t. water. Heat olive oil, butter, garlic and red pepper in cleaned skillet over medium heat until fragrant, about 2 minutes. Add chicken broth, vinegar, pasta water, remaining 1 t. salt and pepper to taste; cook to blend flavors, about 1 minute longer. Toss pasta and sauce in warm serving bowl; sprinkle with breadcrumbs, toss and serve immediately. **
**If not serving immediately, wait to toss with breadcrumb/cheese mixture until right before or they become soggy and gummy.
*You can make your own breadcrumbs by pulsing 3-4 slices quality white bread in a food processor until fine crumb develops, then toast in the oven at 300 degrees until dry.  OR buy premade Panko bread crumbs.
